Kelsey is a Ph.D. RD and was a research associate in human nutrition with Dr. Crystal Karakochuk at the University of British Columbia. Her research interests include developmental origins of disease, establishment of epigenetic marks, and optimization of maternal and infant diet.
During her Ph.D., Kelsey examined supplementation with folic acid vs 5-MTHF in low risk pregnant women. The aim of her research was to determine if 5-MTHF was as effective as folic acid in increasing plasma and RBC folate concentrations during pregnancy, while resulting in lower plasma unmetabolized folic acid.
