Case studies on successful active and intelligent packaging tools that prevent food waste will be shared. Screening innovative and new science and value chain emerging solutions for specific applications is essential and this process will be shared to detail how technologies are best selected. A platform to measure retailer/QSRs and consumer food waste savings, willingness-to-pay for the added expenditure of food waste prevention solutions and the means to communicate this benefit to consumers and retailer/QSRs provides context for the new and innovative solutions.

Ripe for Redesign - Better Tracking to Reduce Food Waste

How can the entire food supply chain track food waste better? In fact, without traceability systems it’s almost impossible to measure the quantity of food wasted on a continuous 24x7x365 basis. Peer Ledger, a blockchain traceability provider, will speak about how organizations can conduct continuous internal and external waste audits to learn what waste flows through their facilities by measuring and recording the amount, type, and reason for the generation of the wasted food. Such traceability systems will help management to create effective food waste strategies. This theme will highlight how companies can collaborate to monitor and share proof of progress towards reducing food waste with both internal and external stakeholders.

Olga Kachook is a Project Manager at GreenBlue, where she leads the Essentials of Sustainable Packaging courses and the Composting Collaborative. Her background includesexpertise in compostable materials and packaging, zero waste facility certification, life cycle analysis, and sustainable materials management.Prior to joining GreenBlue, she led corporate sustainability and waste initiatives at World Centric, Etsy, Cascade Designs, and Cascadia Consulting. Olga has a Master of Environmental Management from Yale Universitys School of Forestry & Environmental Studies, and a Bachelor of Arts in Business Administration from the University of Washington. She is certified as a LEED Green Associate and a TRUE Zero Waste Advisor.

Dr. Claire Sand

Founder, Packaging Technology and Research

Claire Sand is a Global Packaging Leader with 30+ years of broad experience in the food science and packaging spectrum. Sand's mission is to enable a more sustainable food system with science and value chain innovations that more sustainably increases food shelf life and prevents food waste. She leads cross-functional efforts, infuses innovative solutions, provides compelling business and technology strategies and business cases, and generates implementation roadmaps for the packaging and food industry. Dr. Sand is Owner and Founder of Packaging Technology and Research, LLC and Gazelle Mobile Packaging Inc and an Adjunct Professor at the University of Minnesota, Michigan State University and CalPoly as well as Food Technology’s monthly Packaging columnist and a monthly contributor to Packaging Digest. She is an IFT Fellow, Riester-Davis-Brody life-time achievement in food packaging award recipient serves on numerous Editorial Boards is the author of the Packaging Value Chain and is cochair of pacfoodwaste. Claire has held previous positions in basic research, development market research, and marketing in Germany, Colombia, and Thailand and at Total Quality Marketing, Nestle, General Mills, Kraft Heinz, Safeway, and in academia. Dr. Sand holds a doctorate degree in Food Science and Nutrition from the University of Minnesota and MS and BS in Packaging from Michigan State University.

Dr. Dawn Jutla

Dr. Dawn Jutla is the polymath Founder and co-CEO of Peer Ledger, a blockchain traceability company that produces sustainability proofs for products. She is an entrepreneur, researcher, and the Scotiabank Professor of Technology Entrepreneurship and Innovation at the Sobey School of Business in Canada. She is co-author of a book entitled: e-Business Readiness: A Customer-Focused Framework and the author of over 90 peer-reviewed academic papers. In 2009 Dawn was a recipient of the World Technology Award in the software category for her work in online privacy. She has over 18 years of Board experience in US and Canadian not-for-profits.
