Part one of this series focuses on the history of white wine production in Bordeaux – when white grapes dominated the Bordeaux vineyard, the subsequent decline in white wine and then the renaissance in the 1990’s and 2000’s. We’ll discuss the white grape varieties planted and in particular the groundbreaking research by Professor Denis Dubourdieu and his team in Bordeaux that identified the Sauvignon Blanc aromatic precursor compounds. We will also look at the different soil types for white grapes as well as typical vineyard and winemaking practices choices that influence the wines.
