The COVID-19 pandemic has created massive disruption in the restaurant industry, altering how restaurant operators are able to serve consumers. Off-premise service options such as takeout and curbside pickup have become and are expected to remain the new normal, even as states and municipalities begin to allow restaurants to slowly open up their dining rooms. The reopening of dining rooms creates additional complexities as operators seek to balance dine-in and takeout business while implementing rigid safety and sanitation protocols to keep guests and staff safe.
